Harvest Newrybar has released the line-up for the Wild Harvest chef series 2018.
Guest chefs will work alongside head chef Alastair Waddell and forager Peter Hardwick to create a series of one-off menus exploring and showcasing Australia’s underutilised native and wild ingredients.
Chefs include Nelly Robinson from nel. Sydney; Ben Willis from Aubergine, Canberra; Bruno Loubet from Grain Store, London and Alejandro Cancino from Urbane, Brisbane.
Nelly Robinson from nel. restaurant will kick off the new line-up on Wednesday 14 March with a four-course menu celebrating contemporary interpretations of modern Australian dishes.
Canberra’s nationally renowned chef Ben Willis from Aubergine restaurant will be joining the Harvest duo on Wednesday 18 April. The chef will be bringing his intricate and highly seasonal cooking style to the Byron Bay palate.
After eight years in the UK, Bruno Loubet will cook on Wednesday 16 May. Head chef Alastair Waddell is looking forward to commemorating his return in Byron Bay’s humble village of Newrybar.
On Wednesday 20 June, Argentinian-born Alejandro Cancino will showcase his plant-based cooking philosophy with a four-course vegan-friendly menu highlighting the diverse native produce the Byron Hinterland has to offer.
For each event, sommelier Russ Berry will be inviting smaller Australian growers that produce interesting wines to showcase their offering.
