The team behind Hellenic Republic is opening a new venue, Hellenic Hotel, in the old Hobsons Bay Hotel, in Williamstown, Melbourne.
George Calombaris and co-owner Travis McAuley have hired Josh Pelham as the Hellenic Hotel’s head chef. Pelham worked with Calombaris at Fenix and The Press Club before heading overseas, and working as head chef at London’s The Square before returning to Melbourne to work at Estelle by Scott Pickett.
“We’re rapt to have Josh on the Hellenic team,” Calombaris said. “This project has been such a long time coming, but it will be well worth the wait. The pub has had a remarkable history and it’s a real privilege to give the old building a new life – the Hellenic way.”
March Studio’s design reflects Hellenic hospitality with a seaside atmosphere. “The design is inspired by its local history and Greek culture; Greek culture is intimately connected to the sea; a connection that will be celebrated in the colours and textures of the restaurant,” said lead architect Rodney Eggleston.
Hellenic Hotel will offer modern Greek dining with unique Hellenic wines.
“I call it Gastro Greek, which means a Hellenic touch on great Aussie pub food,” said Calombaris.
The Hellenic Hotel will be open seven days a week from noon until late for dine-in or take-away. The official opening date will be announced in May 2016.
