Celebrated chef Matt Moran has curated Savour Sydney, a one-day food festival at Opera Bar with dishes from stellar local and regional hospitality talent.
The festival will feature pop up stalls from Aria, Chiswick, Rekōdo, and North Bondi Fish, alongside beverages from PS40, Hey Rosey, and The Waratah.
First Nations-owned social enterprise IndigiGrow are supplying native ingredients which will take centre stage across the menus.
Aria’s Thomas Gorringe will be serving a pine mushroom and smoked cheddar tart; from David Coumont of North Bondi Fish, snapper crudo with yuzu, and taramasalata with salmon roe; Rhys Lamb-Watson of Rekōdo will present watermelon sashimi, spicy tuna tacos, crispy pork belly baos, and a strawberry gum sando; and Samuel Rozsnyoi of Chiswick will be serving a cinnamon myrtle custard tart alongside savoury dishes.

“Savour Sydney is all about shining a light on the incredible food and drink culture we have right here in our own backyard,” says Moran, who added that the venues featured are among his local favourites.
“Collaborating with IndigiGrow is also something that means a lot to me and it’s a privilege to help share their knowledge, culture and incredible native ingredients with more people. I think everyone who comes down will walk away not just well fed, but inspired by what makes Australian food truly special,” says Moran.
The event will also host live music and a 2pm talk between Matt Moran and IndigiGrow CEO Peter Cooley.
Tickets can be purchased for $50 via the link here. Each ticket includes four dishes plus a welcome drink. Alternatively, dishes can be purchased individually from the vendors, with prices starting at $15.
