Located in the previous Barrio Byron Bay space, Nourishing Habitat is the latest hospitality venture by restaurateurs Uktu Ayhan (Foxy Luu’s, Sefa Kitchen) and Nicolas Degryse (Pure Hospitality Group).
Nourishing Habitat is set to be a multi-venue operation in the one building, with the first of the three planned venues Commune Canteen opening this week.
“Nourishing Habitat is more than just a hospitality concept; it’s a dream project loaded with purpose. Each of the three eateries is curated to cater to the nourishment needs of the Byron Bay community,” says Ayhan.
“We are thrilled to showcase what they have been brewing, inviting everyone to be part of this exciting journey.”
The first venue Commune Canteen is serving up a Mediterranean-style menu featuring seasonal salads, slow-cooked dishes, and house made breads.
Highlights from the debut menu include duck shanks with spiced orange; lamb shish kabob with flatbread; crispy gnocchi with carrot top pesto; breakfast ratatouille; and house made dolmades.
The second venue at Nourishing Habitat is expected to be Spanish wine bar Gitana which will open in mid-July and operate from 4pm Wednesday through to Saturday.
Spanish tapas will be on serve at the 30-seat venue, sending a nod to the Andalusian and Basque regions of Spain.
The final, yet-to-be-named venue is slated to open mid-August and will be a Middle Eastern-inspired offering championing the venue’s wood-fire grill.
The venue will also host live music, and serve both lunch and dinner service Monday through to Saturday.
Commune Canteen is now open, with Gitana slated to open mid-July, and the unnamed Middle Eastern eatery to follow mid-August.
