Four Australian chefs will battle it out at the annual Hunter Culinary Association Food Fight to be held on 18 June.
Joel Bickford (Aria), Mitch Orr (ACME), Frank Fawkner (EXP Restaurant) and Hamish Watt (Crowne Plaza Hunter Valley) will go head to head to create a modern dish based on a classic.
Each dish will be matched with a Hunter Valley wine, and guests will vote for the dish they preferred at the conclusion of lunch.
“So much of our modern cuisine stems from the classics — the tried and true dishes people love year after year and pass down through families and generations,” says Lisa Margan, HCA deputy chair.
“The Hunter Valley is the birthplace of the Australian wine industry, so it’s the perfect setting for a contest that marries the old and the new. And when we have four chefs of this calibre given free rein to put their individual stamps on dishes like these, you know the results will be incredible.”
The Food Fight event also raises money for the Brett Graham Scholarship through a charity auction and offers the opportunity for a young chef to work with Graham at The Ledbury in London.
The Food Fight will be held on Monday 18 June and commence at 11am at the Crowne Plaza Hunter Valley.
Tickets are $175 for HCA members, $220 for non‐members and $90 for apprentice chefs.
