Hyde Paradiso has opened its doors in Peppers Soul Surfers Paradise, offering diners Mediterranean-inspired fare.
Joel Bryant has been appointed as executive chef and has designed a menu influenced by Greek, Turkish, Moroccan, Lebanese and Italian cuisines.
“Each dish is inspired by my travels throughout Europe and the casual tapas style of service enjoyed in cities like Barcelona and Lisbon,” says the chef. “Our food embraces the culture of social sharing, with fresh light dishes designed to complement sea views, while guests are sipping tasty cocktails and refreshing wines.”
Snacks range from hummus and taramasalata served with breads before guests can move to small plates including sumac, salt and pepper squid or kale and pecorino arancini. There’s also a family-style menu available which includes Portuguese chicken with chickpea salad or whole baked reef fish with roasted fennel.
The venue will offer a range of beverages from cocktails to Prosecco alongside a selection of white and red wine plus rose.
