Chef Justin North has launched JD’s Chicken Co on Gympie Terrace in Noosa with Frenchie’s Brasserie’s David Singer.
The contemporary chicken shop has been five years in the making and revolves around a traditional French rotisserie, with the team taking a considered approach to each dish on the menu.
“We wanted to create something that was centered around the rotisserie, but with a contemporary twist,” says North.
“We love the area for its diverse collection of casual eateries, and we knew JD’s would be a great fit.”
Chickens are cooked on the rotisserie with the offering rounded out with potato mash, hot chicken rolls, a fried chicken burger with smoked bacon and cheese, daily salads and duck fat roasted potatoes.
“Everything from our sauces to our chicken salt is made in-house and has incredible depth of flavour,” says North.
“It has been a wonderful process finding our point of difference – our signature hot chicken roll with carved rotisserie chicken and lashings of our house made gravy is one of my favourites.”
JD’s is open for takeaway Wednesday to Sunday from 11am until 7pm.
