Set to open in late November in Victoria’s Collingwood, Pincho Disco is the latest venue to join the Kickon Group’s portfolio alongside Cinder, The Terminus Hotel, and Palm Beach’s The Collective.
Pincho Disco’s culinary direction takes inspiration from the flavours and ingredients of Latin America whilst championing local produce.
The menu will consist of generous share plates plus a dedicated whole raw bar section with dishes such as kingfish cannelloni with caviar, snapper carpaccio, and a ceviche of the day.
“The dishes and traditions of Latin America offer so much excitement, and a diverse continent of flavours to explore,” says Kickon Group Culinary Director Jake Furst.
“There’s incredible depth to the cuisine of each country – combine them all and you have an enormous flavour bomb waiting to explode. Expect plenty of fun creations that will offer the unexpected.”
The drinks offering will include a ever-changing list of signature cocktails which take their flavours from the venue’s cuisine.
Wine-wise, expect a strong collection of pet nat, skin contact, natural, and orange products.
Studio Tate will lead the venue’s design, which is expected to be a vibrant, colour-drenched affair encouraging guests to linger after meals and become a go-to spot for the whole night.
Pincho Disco is set to open in late November at 16 Langridge Street, Collingwood.
