George Calombaris’ Made Establishment has overhauled their Hellenic Republic concept in Melbourne, tasking three chefs with taking the brand in a new direction.
Good Food reports Calombaris will focus on running the Brighton location, which will remain as is, but the other three venues in Brunswick East, Kew and Williamstown will no longer offer Greek cuisine.
In a surprise move, Pope Joan and The Pie Shop chef Matt Wilkinson will take over the Brunswick East location which will reopen as Crofter Dining Room and Bar in early 2020.
Crofter will serve a British-influenced menu with vegetable-centric dishes, roti, wood-fired fare plus a beverage list punctuated with plenty of Four Pillars gin.
Hellenic Hotel head chef Dan Szwarc is now spearheading the Williamstown location, which has relaunched under the name Hotel Argentina, and now offers a South American menu, while the Kew outpost will dish up Italian cuisine under the new name of Vito.
