Maestro Hospitality (run by Anna and Alessandro Pavoni) and business partner Bill Drakopolous (Sydney Restaurants Group) have purchased the iconic Marie Louise Salon on Enmore Road in Sydney’s Inner West.
The two forces are the new custodians of the heritage-listed site which was previously home to Bar Louise, operated by Paisano & Daughters, which decided to sell the venue and focus on its string of new openings on Australia Street in Newtown.
Vineria Luisa will cover two levels and have around 70 seats when it opens in the coming months. Described as a wine bar and gintoneria, Maestro Hospitality’s Alessandro Pavoni says the venue will cater to a range of diners from those looking to stop by for a post-work drink and a plate of pasta and others wanting to sit down for a celebratory meal with friends and family. “It will be an extension of your house where the bartender makes your favourite and the pasta is even better than your Nonna’s,” he says. “Who doesn’t want a place like this around the corner?”
The venue will offer a substantial collection of gins, a Euro-leaning wine list, Italian dishes, and genuine hospitality. “Our passionate team is dedicated to ensuring consistent quality, impeccable attention to detail, and personalised service with a side of Italian charm”, says the Maestro team.
As for the iconic lavender and pink façade? Locals needn’t worry – the shopfront is protected and won’t be going anywhere.
Vineria Luisa will be the second venue from Maestro and Drakopoulos, following on from the opening of Summer Hill outpost Postino Osteria in September last year. The new addition is slated to open in mid-2025.
