Chef Matt Wilkinson has joined Montalto Estate as the winery’s new culinary consultant.
Wilkinson is currently operating The Pie Shop and was leading the team at Crofter, before exiting the business earlier this year after MaDE Establishment entered voluntary administration.
The chef says he’s incredibly excited to join Montalto, which is located in Red South Hill in Victoria.
“With spring here and the Montalto estate kitchen gardens a burst with produce, what more could a cook ask for?”
While the winery is closed for dine-in trade, Wilkinson has worked on a new takeaway offering; a weekend lunch menu that will change weekly and remain on offer until the end of lockdown (26 October).
Inspired by the traditional Sunday lunch at home, the first menu showcases the venue’s produce along with ingredients sourced across the Mornington Peninsula.
Dishes include preserved lemon and roasted garlic free-range chicken; heirloom roasted carrots with herb and spice oil; flowering greens with caper and raisin; leaves with seed mix and green goddess dressing; estate olives; cheese and a Cobb loaf for $140.
“Working with Matt, we came to see his shared passion for growing, sourcing and presenting the best tasting produce he can,” says says Heidi Williams, Montalto director – people, hospitality and community.
“Our aligned values make for a natural relationship, starting with this collaboration.”
