Diego Huerta has been announced as the new executive chef of Middle Eastern eatery Maha Restaurant located in the Melbourne CBD.
The Mexico-born chef studied at Ferrandi Paris cooking school, before landing positions at Michelin-starred venues such as Paris’ Relais Louis XIII and Pavillio Ledoyen, and Geranium in Copenhagen.
Huerta moved to Melbourne in 2020, and worked as senior sous chef and executive chef at Lûmé where the venue was awarded two hats by Good Food during his tenure.
He now leads Maha Restaurant continuing the venue’s renowned Middle Eastern-inspired ethos while showcasing his own technique and flair.
Guests are able to order from the tasting menu ($175pp) which features Maha’s signature dishes such as Lebanese garlic dumplings and lamb shoulder.
Huerta is also serving up the venue’s Souffra menu ($110pp) which he describes as a more “homely and robust” offering designed to share.
“It’s been a lot of fun exploring new horizons with Middle Eastern flavours and developing a menu that brings to the table all that I have learnt with Shane coaching along the way. I feel very lucky to have his full support,” says Huerta.
“I feel very lucky to have come into Delia Group and instantly been given a seat at the table, exploring food and flavours and creating memorable dining experiences for our guests.”
Huerta’s debut menu is now available at Maha Restaurant, 21 Bond Street, Melbourne, Victoria.
