Dan Hong is back at Lotus after the restaurant officially opened its doors on Saturday night.
The Merivale eatery has taken over the former site of The Fish Shop in Potts Point and has been flagged as an extended pop-up.
Hong started his career with Merivale at Lotus and says he’s “ready and raring” to be part of a small brigade again.
Lotus 2.0’s menu features classics such as the cheeseburger which has been amped up with brisket, chuck steak and dry-aged beef fat along with the hot fudge sundae.
A range of new dishes, described by Hong as “a little more mature, but with the same approachability, fun and flavour” are also available including black truffle grilled cheese toasties, hand-cut noodles with scarlet prawns and XO and a Frosty Fruit granita with coconut sorbet.
Colin Tam and Sam Egerton have curated the beverage list which is anchored by cocktails. The Lotus Martini with Zubrowka will make a return alongside new additions.
While Sydneysiders are flocking to Lotus, Merivale CEO Justin Hemmes says the concept has been brought back for “one last hurrah” before the building is turned over to the new owners.
Lotus is open Tuesday to Saturday for from 4pm and from 1pm on Sundays.
