Chef Evan White and his partner Amelia Stokes have teamed up with the owners of Harvest Newrybar and Barrio Byron Bay to open a new Mexican taqueria.
Opening in July, Chupacabra will channel a more coastal style of Mexican cooking, in a relaxed setting in Byron Bay.
The menu will feature “slow fast food” with dishes such as tacos al pastor with grilled pineapple, daily changing ceviche Mexicana, esquites (off-the-cob corn grilled with condiments) and Cochinita pibil (slow cooked pork, sour orange, coriander, lime, pickled onion).
The restaurant will also serve an exciting cocktail program, which includes a signature Chupacabra margarita on tap. A large range of tequila and mezcal will also be available, as well as a concise wine list that will feature small production local and international wine-makers.
Fresh pressed juices, home-made sodas and a special blend of Mexican coffee will also be on offer.
The 60-seat restaurant aims to transport diners to a beachfront along the coast of Mexico with its bright colour palette and an abundance of plants and green foliage.
