Two culinary forces are set to come together in February for a limited dining series at Melbourne’s Freyja.
The Nordic-inspired restaurant’s Executive Chef Jae Bang is collaborating with Hugo Souchet from three Michelin-star restaurant Les Pres d’Eugenie in France.
Over three nights, the chefs will serve a six-course set menu commencing on 8 February as part of the 4 Hands dining series.
Some of Souchet’s signature dishes will be recreated with a Freyja twist and made with the highest-quality Australian produce.
Exact dishes have yet to be announced, but it’s promised to be a decadent affair – expect plenty of Oscietra and beluga caviar courtesy of Eustralis Food and Sturia Caviar.
Freyja fast became one of the city’s most lauded restaurants with Bang at the helm since 2022.
The Seoul-born chef joined the new opening on Collins Street after stints at some of the world’s top restaurants including Daniel in New York, Re-naa in Norway, and the Waldorf Astoria in New York.
Bookings are now open with sittings commencing at 6pm from 8-10 February.
The menu is priced at $350 per head, and includes a welcome glass of Pernet et Pernet Champagne.
