Hawker Chan will open its first Australian venue on 8 December in Melbourne. The Singaporean Chicken Rice venue, headed by chef Chan Hon Meng, was awarded one Michelin star in 2016 and 2017.
Like its Singaporean sibling, the venue is a Hawker-style canteen dining that dishes up fast but tasty food in a casual environment. The hero of menu is Soy Sauce Chicken, a national Singaporean dish, that features chicken gently poached in chicken stock with ginger and soya sauce, after which it is immediately blanched, giving the chicken a soft gelatinous skin texture.
Seating 92 people, Hawker Chan will also offer other traditional Singaporean classics such as Soya Sauce Chicken Hor Fun, Char Siew Noodle, Wonton Soup, Roasted Pork Rice, Pork Rib Noodle and noodle.
“Hawker eating is successful because it makes people happy — it will definitely be a trend in Australia,” says Meng.
