Launching on 22 January, Molto Italian will be located on Eastlake Parade in Canberra’s Kingston.

Seating 130, the restaurant has sleek, modern interiors, high ceilings and an open kitchen and bar with a wood fired oven.

Carlo Tosolini, the man who was behind Tosolini’s Italian restaurant for many years, is now heading up Molto Italian, where the restaurateur is now trying to recreate some of his most nostalgic memories.

“I have been a restaurateur for 29 years, from the early days of watching my mum make fresh gnocchi and fresh pasta and accompanying sauces, the memory has lingered with me. This speaks of La Famiglia, for me Molto is about recreating that in a new place,” he said.

Head chef Giuseppe Pappalardo as well as Roman pizza  chef Giordano Renzetti  will focus on the best locally and internationally sourced produce, including mozzarella which will be flown in weekly from Italy. Where possible, menu items will be made by hand using authentic Italian methods.

The menu showcases classic Italian cuisine “with a high level of finesse”, including items such as hand cut pappardelle Bolognese; Bistecca Fiorentina, imported mozarella and burrata teamed with additions from the stuzzichini menu and a selection of Pizze Rosse and Biance (with and without tomato base).

The extensive wine list will showcase both local and international drops as well as classic cocktails such as the negroni, Aperol spritz and Americano.

Molto will be open Monday through to Wednesday for lunch (12- 3pm) and dinner (6 – 10pm), Thursday through to Sunday from lunch (12pm) til late (11pm).
