Monty Koludrovic is set to leave his executive chef post at Icebergs and move to Byron Bay in the coming months.
The chef confirmed his exit to Good Food, telling the publication that while it’s the right time to leave, he’s “never resigned from a job I love so much”.
Koludrovic has been at the helm of the iconic Bondi restaurant for the past six years and has also been on the ground at sister venues The Dolphin Hotel and Bondi Beach Public Bar.
His wife Jaci, pastry chef at Icebergs and The Dolphin, will also be leaving the group.
“We are looking forward to spending time in my hometown in Byron close to family and kids, and taking a much-needed break while we consider what new opportunities we have ahead,” Monty told Delicious.
Owner of the Icebergs group Maurice Terzini has commented on the move, calling Koludrovic an “incredible chef”.
“We’re sad to lose him but excited for what’s in store for him in the future,” he told Good Food.
It’s been reported Terzini is in the process of shortlisting potential replacements, with an announcement to be made next year.
