Bistro Morgan talent Morgan Hipworth has announced his latest venue Maven is slated to open this December in Melbourne’s Fitzroy.
Maven will be open daily for breakfast and lunch, and from Thursday to Sunday for dinner service, too.
Hipworth will be joined by Co-head Chef Daniel Neytha who comes from time spent at Ovolo Hotel’s Lona Misa in Melbourne.
Neytha’s Colombian heritage along with his experience in South American and European cuisine is set to influence Maven’s menu.
Some of the dishes on the menu include a chilli egg scramble, duck waffles, a crispy pork sandwich, and a classic roast chicken.
There will also be a cake cabinet featuring tarts, croissants, entremets, muffins, and other baked goods by the Maven team.

“Maven is the culmination of every kitchen experiment, every lesson from my mentors, and every feedback from patrons,” says Hipworth.
“It’s where age-old traditions meet modern flavours. From the aromatic first brew in the morning to the very last bite of our signature desserts at night, Maven encapsulates my journey, lessons, and aspirations as a chef.”
Maven is Morgan Hipworth’s third venue, after opening his flagship Bistro Morgan store in Windsor, and a second location in Fitzroy in August.
Studio Esteta is behind the venue’s design which is set to be an expression of old-meets-new with rustic yet contemporary interiors.
Maven is set to open in December at 402 Brunswick Street, Fitzroy, Victoria.
