Appetite For Excellence has joined forces with Australian Pork’s Porkstars campaign to create an industry-only series of dinners, with the aim of building and supporting a community for young hospitality workers.

The Young Swines Supper Club events will be one night-only pop-ups where Appetite For Excellence alumni create a menu focusing on pork, for up to 30 fellow industry members. Each chef will prepare their own course, with waiters from the Appetite program matching beverages and managing the floor.

Young waiters and chefs (sous chefs and below) are invited to attend the inaugural Young Swines Supper Club gathering, to be held in Melbourne on 14 March.

“The dinners give our young hospitality guests the chance to learn from some of our Melbourne alumni; expand their peer network; see, taste and hear firsthand what future leaders in the industry are doing with food and booze; pick their brains about beverage matching; and hear how they got to where they are today,” said Phee Gardner, Appetite for Excellence project director.

Chefs Jordon Garcia (Assembly Melbourne), Matt Binney (Merricote), Simon Tarlington (Highline) and Victor Liong (Lee Ho Fook & Lawyer, Guns and Money) are collaborating on the inaugural dinner’s four course menu, while sommelier Sonia Bandera (Young Waiter of the Year 2013) and waiter Brooke Adey (Yellow) are collaborating to match beverages while also showcasing their service skills.

Further Young Swines events will be planned throughout the year, including a second dinner in Brisbane in mid-2016.
