New Zealand King Salmon have launched Ōra King Tyee salmon which will be available to select chefs in Australia from March 2018.
Tyee King Salmon grow over a longer period of time, with an average weight of 13kg over a four-year life cycle.
“Because of their longer lifecycle, Ōra King Tyee have a more developed flavour and oil profile,” says Jemma McCowan from New Zealand King Salmon.
“The flesh is refined with dramatic white marbling and the natural oil content in the belly is notably high, drawing comparisons to bluefin tuna.”
Chefs who have experienced the species have remarked on its delicate flavour and clean, herbaceous palate, noting the texture has a distinctive bite without losing the inherent creaminess.
