Chef Peter Conistis has opened the doors to his new Greek restaurant Ploos in Sydney’s Campbells Cove.
The venue is located in the heritage listed warehouses in Campbells Cove and overlooks the harbour.
Conistis is Australia’s most celebrated Greek chefs known for restaurants such as Alpha, Omega, Eleni’s and Cosmos.
The chef presents his unique interpretation of South Agean cooking, while taking inspiration from Cyprus, Crete and neighbouring Middle Eastern cuisines.
A menu of modern takes on old favourites uses a mixture of locally sourced produce and traditional ingredients such as artisanal cheeses, cured meats, Cretan Olive Oil and natural spices.
Other highlights include Greek Nissiotiki salad with heirloom tomatoes, cucumbers, peppers and olives; zucchini fritters and eggplant hommous; braised calamari and a classic haloumi cheese.
Dessert options see the likes of Kaltsounia, a Cretan-style ricotta tart topped with orange blossom honey and raki ice cream.
The outdoor bar offers a range of local and international wines from Australian bio wines to imports from Cyprus and Crete.
Ploos is now open Wednesday to Sunday from 12pm until late.
