Pinchy’s Co. has launched a pop-up in Emporium Melbourne. It’s the second outlet for the sustainable seafood outlet, with its 2017 pop-up in Melbourne’s HWKR restaurant making waves with its lobster rolls from Maine (USA).
Thanks to a partnership with Veuve Clicquot, the Emporium Melbourne pop-up will focus on pairing premium seafood and champagne.
The kitchen is led by ethically conscious head chef Thibult Boggio (former Vue De Monde), with big plans to offer menu items such as smoked ocean trout, octopus and prawns. For now, the roster of signature rolls including wasabi prawn, Napoli prawn and Alaskan king crab, will appear alongside the famous lobster roll, while Veuve Clicquot Brut and Rose grace the drinks list.
Pinchy’s founders Jeremy Schinck and Nick Young bring over two decades of hospitality experience to the business, with their partners Samara Schinck and Marina Young specialising in business and law.
Pinchy’s aims to educate consumers about the protection of our oceans — the venue’s supplier Cozy Harbour Seafood is the only lobster processor in the USA to achieve a BRC Grade A Certificate, ensuring that products are safe, legal and of the highest quality.
