Schmucks Bagels, which launched its flagship store in Melbourne’s Guests Lane in mid-November, is preparing to open its second store, this time in Docklands.
Launching on Merchant Street on 14 December, the new site will be open for breakfast and lunch, delivering Polski bagels, which are European in style.
Founder Jeremy Marmur brought together a team of hospitality professionals for Schmuck’s launch, collaborating with Ben Avramides and Tommy McIntosh from Tommy Collins, as well as chef Simon Winfield.
“Although our concept is playful, the preparation, research and ingredient sourcing that has gone into creating Schmucks Bagels is far from that,” said Marmur.
The Schmucks team has developed a range of both creative and classic bagels, made in traditional European style, and stuffed with seasonal, local filling combination. Options include the Vegemite bagel, with Vegemite infused through the dough, served toasted and with butter, as well as the Hippie Slicker – a seedy bagel with grilled cauliflower, carrot, cumin, hummus, house-pickles, lemon-dressed watercress, and tomato.
Schmucks bagels are made to order, available for dine-in or takeaway or delivery.
