Chef and restaurateur Scott Pickett has added another restaurant to his expanding portfolio with the launch of Pastore.
The restaurant will open in Hotel Chadstone in Melbourne on 1 November and will revolve around Italian-inspired cuisine.
“My love of Italian food and cooking over fire is well known and Pastore will showcase our passion for this cuisine within a beautiful setting,” says Pickett.
Head chef Mirco Speri has worked closely with Pickett to design a menu that focuses on wood-fired proteins and handmade pastas. Launch dishes encompass everything from house-cured duck prosciutto with Davidson plum and Geraldton wax to wood-roasted king prawn with fermented tomato, nduja and fennel pollen and pici with sausage ragu and salted ricotta.
Pickett & Co beverage manager Clint Fox has curated the wine list which will showcase Italian varietals and local producers. A premium selection of wine will be available by the glass alongside a selection of signature cocktails.
The 50-seat restaurant will be open for all-day dining, offering diners breakfast, lunch, snacks and dinner seven days a week.
