Michael Lambie is set to launch a pop-up at Grosvenor Hotel in Melbourne’s St Kilda. Soi 10 will open on Thursday 21 May.
The menu will features influences from Thai, Vietnamese and Malaysian, with buns and dumplings taking centre stage. Each dish is designed to be consumed sans tableware and cutlery, with customers able to pick up their order via the drive-through, reducing the need for contact.
A range of small dishes are on offer, such as king prawn dumplings with ginger, chilli and spring onion and soft shelled crab with roasted rice. Larger dishes are on the menu too; think Lambie’s take on Rendang beef with toasted coconut and pickles.
Lambie will bring his experience helming the kitchens at restaurants including Stokehouse, Circa, Lamaro’s, Taxi, The Smith and Lucy Liu. He will be joined by Grosvenor Hotel’s executive chef Simon Moss and managing director Frank Chilelli.
The new addition will replace recently shuttered St Kilda Burger Bar, at the end of the hotel’s drive-through bottleshop, Grosvenor Cellars. The space has been expanded to suit the times, with the team transforming the bottleshop into a grocer that offers meat, pantry staples and fresh bread alongside alcohol.
