Artisan bakery Sonoma Baking Co. will open in Canberra this month, marking the company’s first venue outside of Sydney.
The full production bakery and 40-seat retail store will be located in Braddon, taking over the former site of Autolyse bakery and cafe.
Head of bakery operations Jordan Miller says the Canberra bakery was an obvious next step for the brand.
“Sonoma has delivered to Canberra for the last five years from our Sydney bakery but when the opportunity came up to take the Lonsdale Street site we jumped at it,” he told Hospitality.
German-born baker Stefan Pischke will lead the new site as head baker, bringing to the role experience at Rockpool Group in Sydney and most recently a start-up artisan bakery in Dubai.
“Our onsite bakery will produce our sourdough breads, pastry, pies and Roman-style pizza,” says Miller.
“We have installed the first Kornfeil compact thermal oil deck oven along with the first Revent One39 baking oven in Australia.”
Sonoma is on track to open its doors in Braddon on 13 August.
