The multi-year, major construction and gallery development at the Australian War Memorial includes new retail food and beverage (café) and events venues. These new combined facilities will enable multiple revenue streams across two cafes, a theatre, a conference facility and unique event spaces.
What we need
The Australian War Memorial must provide a range of modern food and beverage that appeal to all their visitor segments, with service experiences that are commensurate with top Canberra tourist destinations.
We need a modern F&B operator or caterer that can deliver the best of both worlds in F&B retail and catering. Benchmark café experiences that follow the intense peak periods and everyday visitor volumes, with a diverse catering offer that spans the needs of the Memorial clients from best in class catering to approachable and affordable options.
The Memorial
The Australian War Memorial is a leading cultural institution of national significance and a major national tourist attraction, welcoming over 1 million visitors annually. It was ranked number one Australian landmark in the 2016 TripAdvisor Travellers’ Choice awards and is open 364 days per year.
The Memorial combines a shrine, a world-class museum, and an extensive archive. Its mission is to assist Australians to remember, interpret and understand the Australian experience of war and its enduring impact on Australian society.
The project includes a new southern entrance, a new Anzac Hall and glazed link, new gallery fit-outs in the main building creating additional exhibition galleries and Parade Ground and landscaping works to accommodate increased attendance at events.
F&B retail – two cafes
Poppy’s Café (8:30am to 4:30pm each day) sits just outside the Memorial building and has been a main staple for the Memorial visitors and will remain unchanged through the development retaining existing footprint, equipment and interior design.
The new Glazed Link Café (10:00am to 4:00pm each day) will be a welcome respite as the centre piece in the Glazed Link space inside the Memorial. For those that choose not to use Poppy’s this café location will be a perfect spot to break up their journey which is historically 2 hours through the Memorial.
The successful F&B Partner will provide a mix of modern, diverse, familiar and memorable food and beverage that suits each retail location, offering value for money.
Poppy’s & the Glazed Link Café will offer:
› over the counter service (ambient, cold & hot food display)
› a la carte modern, on trend cafe menu
› excellent coffee
› range of cold non-alcoholic beverages
› a small range of alcoholic beverage
Conferencing/functions/major events
The Memorial requires the provision of high quality contemporary catering services for corporate and private functions both during and after hours in the Agreed Facilities and other appropriate areas such as the Sculpture Garden and outside courtyards where marquees can be accommodated.
Functions catering should cover a range of styles and prices including afternoon teas, cocktail finger foods and beverages, and formal sit-down meals.
Pricing and F&B offer must be flexible (affordable) to accommodate for a range of groups such as community groups and veteran’s associations, to corporate clients with more formal cocktail or dinner events. Menus should be changed seasonally to provide variety in the services offered and should also be appropriate for the season.
At certain times of the year, the F&B partner will be required to offer special event catering with pop-up, market-style food offering to large crowds, such as Anzac Day and other specialised events.
