The former Icebergs Dining Room and Bar and L’enclume alumni has been announced as head chef for the upcoming venue.
Jacksons on George is the first venue from hospitality group DTL Entertainment Group Pty Ltd lead by Creative Director Maurice Terzini and General Manager Michael Broome.
The multi-level venue is set to open in spring at the new Sydney Place precinct in Circular Quay.
Jacksons on George will be home to a public bar, upstairs eatery Bistro George, and rooftop bar with the cuisine expected to be a modern take on Australian and European dishes with a focus on locality.
Some of the dishes set to star at the public bar and rooftop include a Moreton Bay bug bun, slow-cooked duck sausage roll, and a brined, air-dried and charcoal-roasted rotisserie chicken.
While at Bistro George, expect salt- and Armagnac-brined Ora King salmon gravlax with blinis and cultured cream, a signature banoffee sundae, plus a selection of steaks including wagyu salt-crusted rib eye.

Jacksons on George is set to open in spring, and will be located at 176 George Street, Sydney.
