Sydney’s Cuckoo Callay is preparing for its third annual Bacon Festival, when it will offer a bacon-based menu alongside items from its seasonal cafe menu.

This year the Bacon Festival is also a nod to film festivals, with the nine limited edition menu items including Some Like it Hog – peanut butter and bacon-stuffed French toast with bacon and banana ice cream, bacon crumb and bruleed banana; Silence of the Hams – a ham hock and vintage cheddar croquette, pea pannacotta, bacon jam and a 63° poached egg; and Close Encounters of the Bacon Rind – bacon steak, maple bacon, double smoked bacon, bacon sausage and two poached eggs on sourdough.

Last year’s most popular dish, the Mac Daddy – double smoked bacon, bacon mac ’n’ cheese, 63° poached egg, tomato relish and fried shallots in a croissant – is also making a reappearance.

Cuckoo Callay, located in Newtown, will be sourcing its produce for the festival entirely from farms in NSW that engage in sustainable and ethical practices.

Cuckoo Callay’s Bacon Festival launches on 14 March and runs for 12 weeks.
