Led by chef Mark Best, Pei Modern at Sydney’s Four Seasons Hotel has closed.
The hotel is currently renovating and redesigning the ground floor restaurant space, with plans to launch a new concept in April 2017.
“Four Seasons Hotel Sydney is continuing its partnership with executive chef, Mark Best, to develop a new restaurant concept, working with award winning Sydney interior design firm, Luchetti Krelle on the restaurant design. With a new restaurant design, concept and menu will come a new name,” a Four Seasons representative told Hospitality.
In the meantime, the restaurant experience from the hotel’s second level has been recreated on the ground floor, with a pop-up called Tables, offering breakfast, lunch and dinner.
Pei Modern’s Sydney closure comes after that of Best’s fine diner, Marque Restaurant, in June last year. At the time, he said the closure would allow him more time to commit to Pei Modern in Sydney and Melbourne, while also maintaining his duties as ambassador for AEG domestic appliances and a member of the culinary panel for Holland America Line.
According to Good Food, Best is no longer involved with Pei Modern in Melbourne, which is also undergoing a renovation and is due to re-open in June with a new late-night supper club concept.
