Sri Lankan-inspired restaurant, The Fold will team up with Shashank Achuta, owner of Sydney Tiffin Room for a one-off pop-up on 7 March.
The event will be held at the restaurant’s Dulwich Hill location and will showcase the best of both Indian and Sri Lankan cuisine in a 13-dish degustation menu.
Running the show is Head Chef Augi De Hoedt who has had 10 years of culinary experience working at the Cinnamon Grand in Sri Lanka and The Crown, Perth.
De Hoedt will join his sons Travin De Hoedt and Jason De Hoedt (Franca Brasserie) and pastry chef Saaya Takahashi (Sixpenny).
Joining the De Hoedt brigade, Achuta will offer up his expertise formed after stints at Fred’s, Hubert, Café Paci and his own restaurant Sydney Tiffin Room.
At $99 pp guests can enjoy dishes such as the salted chilli, curry Leaf & macadamia tart; devilled spanner crab choux, Hiramasa kingfish Acharu and Dark Chocular Brulee with sticky chai ice cream.
Sydney Rock Oysters topped with tomato rasam will be on offer at 6 for $30 or 12 for $60.
