Award-winning restaurant Nostimo, situated within The Greek Club Brisbane, has welcomed Alex Xinis as its new head chef.
After racking up experience in Michelin star restaurants globally, Xinis has returned to create a “standout yet humble” menu of authentic Greek cuisine at Nostimo.
The new menu pays homage to the simple and refined cuisine Xinis grew up eating.
Some of the traditional dishes on the menu include feta bouyiourdi, a dish of spicy baked feta, peppers, onion, tomato; htapodi, octopus cooked in wine; xifias, a grilled swordfish with ladolemono; and a fresh-baked spanakopita with greens, cheese and house-made pastry.
“I’ve always loved getting incredibly creative with food. And now I feel I’ve come full circle – away from overcomplicating food – like grinding a tomato into a powder,” says Xinis.
“When you have the most perfectly ripe, locally grown tomato – paired with the most delicious grilled haloumi, olive oil and a glass of Assyrtiko – the taste and experience is far more captivating.
“This is exactly what we’re aiming to achieve here in Brisbane. We have access to some of the highest-quality produce here in South East Queensland…”
Alongside the à la carte offering, the menu will also encompass a selection of banquet options throughout the day.
