Sydney group Universal Hotels has opened the doors to The Mill in Bondi Junction.
The pub, previously known as Mill Hill Hotel, has undergone an extensive renovation which revolved around restoring and maintaining features of the early 1900s venue.
Former Marvan Hotel chef Vaughan Chapman has been recruited to run the kitchen, which will convert food waste into fertiliser as part of the Enrich360 initiative.
Chapman’s menu is influenced by Asian and Italian cuisines and covers dishes such as Korean fried cauliflower with yuzu pepper glaze and togarashi; a salmon bowl and a duck ragu pie with mash.
It’s the latest venue for Universal Hotels, which is behind 13 other locations including 1821, the Civic Hotel and the Brighton Hotel.
The Mill is open seven days a week for lunch and dinner.
