A new café has opened in the Sydney suburb of Alexandria courtesy of Mario Szucs and Will Smallbone from Gypsy Espresso in Potts Point.
Went to See the Gypsy (WTSTG) is the flagship café for the brand and features a custom Modbar which allows customers to easily speak to baristas as the coffee machine is located under the counter, freeing up space.
WTSTG will use their signature Gypsy Espresso blend and rotate single-origin varieties, with Simon Gautherin taking on the role of head barista.
Ex-Cho Cho San and Devon chef Bryan Loong has been appointed head chef and has designed a breakfast and lunch menu. Dishes including banana loaf with brulee banana, coconut milk sorbet and salted caramel along with a grass-fed beef, smoked bacon and zucchini pickle burger.
The café is open seven days a week from 7am until 4pm.
